Chinese Chicken Skewers | Campingaz x Fell Foodie

Putting food on a stick immediately makes it taste better right? Ok well maybe not but with this Chinese inspired marinade, big flavour will be imparted through every bite of these skewers. If you want to avoid packing out half your larder, make the marinade at home first and decant into a suitable container or really speed things along with a shop bought one. Adding the honey at the end prevents it burning on the grill. Chicken works particularly well but you could switch out for a meat or alternative of your choice. Halloumi works well for vegetarians!

Ingredients
  • 500g chicken breast
  • 2 garlic cloves
  • 1 thumb of ginger
  • 2 limes
  • white sesame seeds
  • 1 red chilli
  • 3 spring onions
  • 1 red onion
  • 2 green peppers
  • soy sauce
  • rice wine vinegar
  • sesame oil
  • honey
  • hoisin sauce
  • oil

Prep The Marinade

You can do this step at home to make things easier. Peel the garlic and ginger. Finely dice or crush the garlic cloves and ginger and add to a bowl. Add 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 1 tablespoon of rice wine vinegar and 2 tablespoons of hoisin sauce to the bowl. Slice one lime in half and add the juice to the bowl. Mix to combine.

Method

Turn on and preheat your grill. Peel and chop the red onion into chunky segments. Deseed the peppers and cut into chunky segments. Set both aside.

Finely slice the red chilli and spring onions, set aside until later for garnish.

Finally dice the chicken breasts. Leave this stage til last so as not to contaminate your chopping board and knife with raw meat. Alternatively, you could buy ready diced chicken or do this at home and keep it refrigerated or in a cool box. Once diced, add the chicken to the marinade.

Thread the pepper, onion and chicken respectively onto skewers, repeating the process until the skewer is full.

Once your skewers are all threaded and ready. Brush a little oil onto the grill using a silicone brush or a bit of kitchen roll. Place the skewers directly onto the grill and allow to cook and char lightly.

After 2-3 minutes, turn the skewers to ensure cooking and charring on all sides. Repeat this process until cooked through, brushing with any remaining marinade halfway through.

Remove the skewers from the heat. Slice your remaining lime and squeeze the juice of half over the chicken. Lightly drizzle some honey over the skewers and top with sesame seeds, sliced chilli and spring onion. Enjoy.
