Royale with cheese”. Guess the film? It’s hard to top a good burger, its no wonder there are so many establishments famous for them dotted around. This one is more suited to rolling green humps rather than golden arches. Smashing the burgers into the grill creates a superior crust to a regular patty. You create far more contact with a hot surface which increases what is known as the Maillard reaction. The spicy, tart, crunchy mayo pairs perfectly with this heightened beefiness.

Ingredients
  • 400g Beef Mince
  • 4 Brioche Buns
  • Sliced cheese of your choosing
  • 1 Tomato
  • 1 Red Onion
  • 1 Babygem Lettuce
  • Mayonaise
  • English Mustard
  • Gherkins
  • Salt & Pepper to taste
  • Oil

Prep The Sauce

You can do this step at home first to make things easier. Add two generous heaped tablespoons of mayonnaise to a bowl followed by 1 teaspoon of English mustard (add more if you would like it a bit more potent). Dice the gherkins into small pieces and add to the bowl along with salt and pepper. Stir to combine and set to one side.

Method

Preheat your grill and prepare your veggies. Peel the onion and thinly slice some full circles. Slice the tomato thinly into slices too then peel some layers off of the baby gem lettuce.

Grab some of the beef mince and roll it into a ball, you should get around 4 balls from this amount. Brush a little oil onto the grill using a silicone brush or a bit of kitchen roll. Place the balls of mince onto the grill, generously spacing these.

Allow to cook for a few minutes to brown and crisp. Using the back of a fish slice or spatula, press firmly down (smash) onto the ball of mince to flatten it onto the grill. Ensure its evenly flattened and then repeat this process with the remaining balls.

Season the burgers with salt and pepper and cook for a few more minutes before flipping. You should have a delicious, looking uniform crust on the burger.

Top the now flipped burgers with slices of cheese and continue to cook until the cheese has melted and the rest of the burger has cooked.

Cut your brioche bun across the middle and open it up. Dollop and spread some of the mustard mayo onto the bottom half then place a slice of tomato, slice of red onion and some lettuce on top.

Remove the patties from the grill and place on top of the lettuce with a final drizzle of mustard mayo. Place the top of the brioche bun on top to complete the stack. Enjoy.
