Superfood One-Pot Stew

This stew recipe is full of antioxidant-rich ingredients, which makes it an extra-nourishing dinner after the day spent outdoors.


  • 1 tsp olive oil
  • 1 tsp cumin
  • 1 tsp turmeric
  • 2 leeks
  • 2 cloves garlic
  • 2cm fresh ginger
  • Pinch of salt
  • 400g kidney beans
  • 500g passata
  • 2 or 3 sprigs of rosemary
  • 2 carrots
  • 2 sweet potatoes
  • Handful of broccoli
  • Handful of cauliflower
  • Handful of kale
  • 50g quinoa
  • 800ml vegetable stock


Sauté the leeks in some olive oil for a few minutes until they are soft. Add the garlic, ginger and dry spices and fry for a few minutes longer.

Add in all the remaining ingredients apart from the kale. Bring to the boil, then reduce the heat to simmer for 30 minutes until all the veg is soft.

Add in the kale 5 minutes before serving.
