One-Cup Tomato and Feta Savoury Pancakes

Ingredients

  • 1 cup self-raising flour
  • 1 cup semi-skimmed milk
  • 1 egg
  • 4 spring onions, finely chopped
  • 1 large handful of cherry tomatoes, quartered
  • 100g feta
  • 1 avocado; halved, destoned and sliced
  • Rocket salad
  • Salt and pepper

Method

Whisk the flour, milk and egg in a large bowl.

Add three quarters of the spring onion, tomato and feta, and stir thoroughly.

Heat a touch of oil in a frying pan on a medium heat. Using a ladle, spoon your mixture into the pan, 1 or 2 spoonfuls at a time (depending on the size of your pan).

When the mixture begins to bubble, use a fish slice to carefully flip each pancake over and cook on the other side.

Serve the pancakes on a bed of rocket, then sprinkle over the remaining tomatoes, feta and spring onions and a pinch of salt and pepper.
