Delicious Vegetarian Recipes Ideal for Outdoor Cooking 

Vegetarian and Vegan diets are on the rise here in the UK, and with so many delicious food options available, it’s easy to understand why. We’ve teamed up with a selection of foodies and outdoor bloggers to come up with a set of recipes that can be simple enough to cook while camping, but tasty enough that you’d probably eat them at home too. With a bit of prep beforehand, these meals can be thrown together on the campsite and enjoyed by even the most avid meat-eater.

Your camping cooking doesn’t have to be limited to barbecue staples and tinned goods, with a bit of imagination and some extra ingredients, you can create fantastic, healthy meals for the whole family.

Here is a selection of some of our favourite vegetarian camping recipes from our cookbooks.

 

1. Grilled Sweet Potato Pouches

A great alternative to a standard jacket potato from foodie blogger The English Kitchen, these grilled sweet potato pouches couldn’t be simpler to make. Simply wrap your sweet potato in foil, add flavour with Worcestershire sauce, parsley flakes, butter, salt & pepper, leave it on the grill till it’s nice and soft, then add some cheese and pecans. Cook for a little while longer and you’ve got a tasty, gooey, sumptuous meal.

2. Sweet Bean Curry

This meat-free curry from blogger Thrify Leslie is ideal for any curry fan including those who don’t like a lot of spice. The bulk of the curry comes from red kidney beans, or beans of your own choosing and mushrooms, so it’s sure to fill you up. The coconut cream, raisins, apple and chutney help give this curry it’s unique sweet taste that will have the campers coming back for more. Throw it all in a single pot, and you’ve got yourself a tasty meal for very little cost.

3. Shortcut Shakshuka

How delicious does that look? This quick Shakshuka recipe from Gastronomic Gorman is ideal for Breakfast, Lunch or Dinner. If you’ve never had Shakshuka, it’s a dish made up of tomatoes, eggs, peppers and spices to create a super-tasty meal. Scoop some onto your toasted bread and you won’t look back. It may seem like there are a few ingredients, but many are spices that will come in useful for plenty of other meals during your stay.

4. Vegetarian Italian Frittata

Long distance hiker and author Keith Foskett provided us with his recipe for this Italian inspired frittata. It’s another recipe suitable for breakfast, lunch or dinner and is packed full of protein ready for the days activities.  Quick and easy to make, and can be put together in a single pan. Give it a try!

5. Rissoto with Soft Cheese & Mushrooms


This energy packed lunchtime option was provided by foodie blogger ‘Cook Style’. Made with just 3 main ingredients plus your usual seasonings, this recipe really is a simple one and can be put together in a single pot/pan. Rissoto is a great choice to fill up ready for an afternoon and evening filled with activity.

6. Chickpea Breakfast Hash with Veggies

This breakfast hash from Fresh off the Grid is packed full of protein to get your day started the right way. Dare we say, it’s a great alternative to the classic fry up and is packed full of flavours. As with all good recipes, the full ingredients could be down to you, just add and replace if there are certain veggies that you don’t like.

7. Grilled Sweet Potato Fajitas

This delicious veggie alternative to the classic fajita family meal comes from Fresh off the Grid. Save yourself time at the campsite by marinating the sweet potatoes at home, popping them in a sealable bag and keeping them in your coolbox. Then you’re simply cooking and putting everything together on site. An ideal option for your first couple of days on holiday. Meat eaters might not even miss the chicken.

8. Vegan Sweet Potato, Black Bean & Coconut Curry


The list of ingredients for this one might make it seem complex, but it’s worth remembering that curry dishes could easily be prepared at home and brought with you in an airtight container for heating on site. This vegan-friendly recipe is packed full of flavour and goodness. Certain parts of the recipe can easily be changed to save cost, but this could mean the meal is no longer vegan-friendly.

9. Speedy Lentil & Bean Chilli with Nachos

Bright, colourful and packed full of flavour. This lentil and bean chilli is another meal idea that can be built up with ingredients that you love, and time can be saved by prepping a lot of it at home before your trip. The spices of the chilli combined with the creamy coolness of the avocado make this a great evening meal option.

10. Red Lentil & Coconut Dal


Rebel Recipes provided us with this great recipe for their red lentil & coconut dal. It’s another simple one-pot recipe (if made without the seeds) and since it’s a curry, it can probably be prepared at home before your trip. Alternatively, bring the ingredients with you and put it together on-site, making everyone jealous with the glorious smells coming from your camp.

11. Thai Red Curry with Halloumi

Teaming a fragrant warming Thai red curry with some tasty halloumi is a pairing that we absolutely love. Blogger Coco Cami provided us with her recipe and it’s really quite simple to put together. It’s an ideal evening meal after a day of adventuring.

12. Pilafi Pourgouri

This Greek-Cypriot inspired dish comes to us from blogger The Purple Pumpkin. A hearty meal made with bulgar wheat, canned tomatoes and dried spaghetti is sure to give you a full satisfied tummy in the evening.

13. Puffed Quinoa and Peanut Butter Bars

An energy-packed snack that you can make at home and take with you on your trip. Ideal for taking on your walks or adventures to give you that little pick-me-up when energy levels are low.

14. Pineapple with Crunchy Mint Sugar

A luxury tasting dessert, ideal for eating when the sun goes down around the campfire. Warm seared pineapple coated in crunchy minty sugar, delicious on their own or with greek yoghurt for accompaniment.

REMEMBER: Don’t feel daunted by the ingredient lists, many of these meals can be made with the same selection of spices, and most can have their prep time cut down by getting things ready at home before you make your trip.
